This amazing recipe is from Gnarly Athlete and slackliner extraordinaire Heather Larsen!! Heather started slacklining in 2011 and has been all over the world exploring new highlines in places like Tasmania, Bosnia and Jerusalem. In addition to slacklining and highlining, Heather is also a fairly accomplished yogi and climber. In her spare time, Heather whips up amazing recipes like this Gnarly Vegan Chia Pudding:
I tend to need a lot more fat in my diet than I typically intake, so I love this dish to start my day or for a quick snack because it has omega 3s fatty acids, calcium, and lots of good vitamins.
Combine the following ingredients (I use a large mason jar)
1/2 cup chia seeds
2 cups coconut milk or almond milk
1/2 teaspoon of vanilla extract
1/4 teaspoon of cinnamon
Cover jar and shake to mix. Place in refrigerator overnight.
Spoon out desired portion of chia pudding into bowl. (Side note: Everything tastes better if eaten out of hand thrown pottery.)
Mix in a scoop of Gnarly Vegan (yum yum)
Apricot jam made from a fruit tree down the road
Add granola for extra crunch!
